    I don't know that this is exactly the right place for this thread, but I can't think of another place at the moment, so be aware that this may be moved.
    Anyway, it looks like you're in the market for the more melodic/virtuoso side of metal, and that does span a few genres. First and foremost, I believe that Kalmah would be a shoe in for you, as they're a bit like a more frantic Children of Bodom, but win a similar penchant for protracted guitar solos and Finnish melodies. Ensiferum is also similar, but with a more folky predilection like Wintersun (Jari of Wintersun was an early member of Ensiferum). You're right though, there aren't a ton of bands playing in that style these days, but you may also find Catamenia to your liking.
    As for Megadeth's Rust in Piece, it's a thrash metal album that doesn't skimp on melody or precision. For similarly complex and melodious listens, I would suggest checking out Artillery (maybe not the super early stuff), Vektor, Watchtower, Realm, and perhaps Annihilator's debut album. Heavier and more intricate power/speed metal from the likes of Agent Steel, Liege Lord, Savatage (80'S releases), Helstar (especially A Distant Thunder and Nosferatu), Jag Panzer, Running Wild, and Blind Guardian might also scratch that itch.
    Regarding the last two that you mentioned, those are on the more guitar centric side of melodic death metal, and most of what internet lists will call melodic death metal don't have any death metal in their sound at all. However, what you mentioned is the side of melodic death metal that I care the most about, so I can provide some help. I would suggest checking out Arghoslent (if you don't mind some xenophobic lyrics), Garden of Shadows, Enforsaken, Black Harvest, In Flames (but only up through The Jester Race), Arch Enemy (but only up through Burning Bridges), Darkane (especially Layers of Lies), Demonoid, Hollenthon, Soilwork (but only through Steelbath Suicide), Sentenced's North From Here, Cenotaph's Riding Our Black Oceans, At the Gates (up through With Fear I Kiss the Burning Darkness), Centinex, and early Amon Amarth for the viking side of that sound. You could also check out melodic black/death metal bands like Dissection, Sacramentum, Unanimated, Dawn, etc..., or bands that fuse melodic death metal and doom, like October Tide, Atten Ash, Daylight Dies, Ablaze in Hatred, Rapture, etc...
    Hopefully you find something among those that suits your fancy. Feel free to check back with what you enjoyed versus what you didn't, and I can try to come up with some others.

    The old school is almost always the best school, or at the very least, it's the time frame that has the highest percentage of quality releases. I would definitely recommend checking out the bands that founded the genre first and work your way forward, but I can also give you some specific recommendations based on the bands that you listed, as they are a more varied lot than you may initially think. Cattle Decapitation is death/grind, and for some similar artists, I would recommend Cephalic Carnage, Pig Destroyer (grindcore), and Impaled. Decapitated is technical death metal, so for similar artists, I would go for Nile, Suffocation, and Cryptopsy (avoid The Unspoken King at all costs). Cannibal Corpse is meat and potatoes Florida death metal, so you could check out Malevolent Creation (especially Retribution), Blood Red Throne (first 3 albums), and Vomitory. Six Feet Under is groovy mid-paced death metal, so I would suggest listening to Obituary, Jungle Rot, and Benediction if you want more like that. Deicide is that kind of relentless and blasphemous death metal that is comparable to bands like Sinister, Krisiun, and Vader. Morbid Angel were the pioneers of convoluted and speedy variety of death metal, and some bands that have followed in their footsteps would include Angelcorpse, Centurian, and Hate Eternal (stick to older releases). This doesn't even touch on many of the other sides of death metal, like dissonant/avant-garde death metal, progressive death metal, atmospheric death metal, melodic death metal, doom/death metal, death/thrash, death/black metal, Swedish death metal, Finnish death metal, primal/proto death metal, brutal death metal, slam death metal, and a number of other regional sounds and styles. Needless to say, it's a much bigger and more complex genre than many give it credit for.

    I agree with FA, I think you're overthinking this, and that is your problem. I have certainly been guilty of this plenty, and it's the quickest way to get writers block IMO. What I try to do is put myself into the mood that I want to create, and then just play until it feels right. Sometimes I have specific ideas that I have to find the right notes and cadence for, which can be frustrating, but it does get easier as I play more in that style. Other times, I will just have an intuition about what the next section should do, i.e. speed up, slow down, sound more epic or more morose, etc..., and then just start down that path until you find what fits. When I started playing black metal, it felt like I was starting over, having to develop a new "vocabulary" as FA put it. Different patterns and note choices will sound better to you, and you'll find that what you write will start to take on an identity. You can't force what that identity is, so while you may end up playing something in the style that you had intended, it will likely sound different than you would imagine. Let it happen, find your sound, and run with it.
